Chef Alessandra threw this dish together for herself a couple weeks ago and it was AMAZING so she had to share it with her fans!
Thick sliced Italian eggplant is brushed with balsamic vinegar, EVOO, garlic and S/P. She then pre roasts it, spreads on a layer of
her juicy oven roasted cherry tomatoes and tops it with fresh mozzarella for a ready to finish in the oven, delish-dish.
2 large slices per order make for a couple of great side dishes or you can add chicken breast for an entree.
